A Taste of Brazil

Brazilian recipe..Feijoada (Brazilian Black Beans)

1 16 oz bag of black beans
1-2 lbs sweet sausage (Portuguese preferably)
1 lb pork spare ribs
2 lbs carne seca (salted, cured beef) (I couldn't find that so I used sirloin strips)
3 cloves of garlic
2 tsp onion powder or 1 whole med onion
2 TBS oil

Total prep time 1 hour, give or take. (Not including soaking the beans)
Total cook time around 3 1/2 hrs.

Soak beans overnight. If using the carne seca, soak for 36 hours.
Drain beans and put in large pot, cover beans with water at least 3 inches over beans. Heat to a boil over medium heat. (Takes forever!) In the meantime, cute up your sausage and beef into 1 inch pieces. Cut ribs into 2 rib sections. When beans start to boil, add in meats and reduce heat to med-low.Let simmer for 2 hours or until beans are soft. In another pan, heat up oil, garlic, and onion and add in 2 ladle fulls of cooked beans. Stir it up a bit and mash the beans. Add mashed up beans/garlic/onion back to large pot. Simmer again for at least an hour. Serve with rice and a couple slices of orange. [Be sure to ladle some of the juice onto the rice and beans and meat to ensure extra juiciness!]

Here is the Original Recipe  that I used. Another recipe I saw used hot sauce, I didn't think it needed anything else, but the next time I make it I might try a little hot sauce on it.
